Chocolate Chip Cookie S’mores Bar

Here’s the thing, I think fire is the most exciting part of s’mores. I like them, but they just aren’t anything that special to me. Once I put s’mores on top of chocolate chip cookies, the whole game changed. These bars are chewy, gooey, and SO GOOD. All the s’more mix-ins of graham cracker pieces, marshmallows, and more chocolate on top of regular chocolate chip cookies really elevates this perfect summer dessert.

The recipe is super simple. I even ended up only using one bowl for recipe and didn’t combine the flour mixture in a separate bowl first, which did not seem to affect the final product. I also added more chocolate bar pieces to the top because you never can go wrong with more chocolate.

I ended up baking the the bars for 10 additional minutes over the recipe, because they were not set when the timer went off. The marshmallows got even more toasty and delicious with the extra time.

I would not recommend baking them for longer than 10 minutes over the recipe’s time to make sure the bars keep chewy and soft.
